🌽 Black Bean and Corn Salad
Ingredients
1 can (15 oz) black beans, drained and rinsed
1 can (15 oz) sweet corn, drained (or about 1½ cups fresh/frozen corn)
½ small onion, finely chopped (white or red onion works)
½ green bell pepper or 1 jalapeño, finely diced (optional for heat)
2 tbsp olive oil
1–2 tbsp lime juice (fresh is best)
½ tsp salt (adjust to taste)
¼ tsp black pepper
¼ tsp cumin (optional, adds a smoky flavor)
1 tbsp chopped cilantro (optional, for freshness)
Instructions
Prepare ingredients:
Rinse and drain the black beans and corn well. Chop onion and pepper finely.Mix:
In a medium bowl, combine beans, corn, onion, and pepper.Dress:
Add olive oil, lime juice, salt, pepper, and cumin (if using). Stir until evenly coated.Chill (optional):
Let sit in the refrigerator for at least 30 minutes to let flavors meld.Serve:
Serve cold or at room temperature. It’s great as a side, with chips, or on tacos, burritos, or salads.
Variations
Add diced avocado or tomatoes for extra color and flavor.
Mix in crumbled feta or cotija cheese for a creamy touch.
Substitute lime juice with apple cider vinegar for a tangier flavor.
