INGREDIENTS
2 packs of mushrooms
2 zucchini
1 container of fresh spinach
Panko bread crumbs (1/2 cup)
Shredded mozzarella cheese (1/2 cup)
Saute your sliced mushrooms and spinach with salt, lemon pepper, and onion powder. Then get your baking dish (spray with cooking spray), then layer semi-thick slices of raw zucchini, mushroom/spinich mixture, and mozz cheese. I did two layers. On top cover with panko bread crumbs and drizzle olive oil. Bake uncovered for 30 min at 350.
