🌽 Black Bean and Corn Salad

Ingredients

  • 1 can (15 oz) black beans, drained and rinsed

  • 1 can (15 oz) sweet corn, drained (or about 1½ cups fresh/frozen corn)

  • ½ small onion, finely chopped (white or red onion works)

  • ½ green bell pepper or 1 jalapeño, finely diced (optional for heat)

  • 2 tbsp olive oil

  • 1–2 tbsp lime juice (fresh is best)

  • ½ tsp salt (adjust to taste)

  • ¼ tsp black pepper

  • ¼ tsp cumin (optional, adds a smoky flavor)

  • 1 tbsp chopped cilantro (optional, for freshness)


Instructions

  1. Prepare ingredients:
    Rinse and drain the black beans and corn well. Chop onion and pepper finely.

  2. Mix:
    In a medium bowl, combine beans, corn, onion, and pepper.

  3. Dress:
    Add olive oil, lime juice, salt, pepper, and cumin (if using). Stir until evenly coated.

  4. Chill (optional):
    Let sit in the refrigerator for at least 30 minutes to let flavors meld.

  5. Serve:
    Serve cold or at room temperature. It’s great as a side, with chips, or on tacos, burritos, or salads.


Variations

  • Add diced avocado or tomatoes for extra color and flavor.

  • Mix in crumbled feta or cotija cheese for a creamy touch.

  • Substitute lime juice with apple cider vinegar for a tangier flavor.
