Christmas Eve Cinnamon Crisps
Ingredients
1 cup unsalted butter, softened
1 cup granulated sugar
1 large egg
2 teaspoons vanilla extract
2½ cups all-purpose flour
½ teaspoon salt
Cinnamon Sugar Topping
¼ cup granulated sugar
1 tablespoon ground cinnamon
Instructions
Cream the butter and sugar
In a large bowl, beat the butter and sugar together until light and fluffy (about 2–3 minutes).Add wet ingredients
Mix in the egg and vanilla until fully combined.Add dry ingredients
Gradually mix in the flour and salt until a soft dough forms.Chill the dough
Divide the dough in half, flatten into discs, wrap in plastic wrap, and refrigerate for at least 1 hour (or overnight for best flavor).Preheat oven
Preheat to 350°F (175°C). Line baking sheets with parchment paper.Roll and cut
Roll dough out on a lightly floured surface to about ⅛-inch thickness. Cut into small squares, diamonds, or festive shapes.Add cinnamon sugar
Combine sugar and cinnamon. Sprinkle generously over each cookie, lightly pressing it in.Bake
Bake for 8–10 minutes, or until edges are just turning golden.
(They should be crisp but not dark.)Cool completely
Transfer to a wire rack. They will crisp up more as they cool.
