Steak Loaded Potato Bites
Ingredients (Serves 4–6)
Potatoes
1½ pounds baby potatoes (Yukon gold or red)
2 tablespoons olive oil
½ teaspoon salt
½ teaspoon black pepper
½ teaspoon garlic powder
½ teaspoon paprika
Steak
1 pound sirloin or ribeye steak
Salt and black pepper, to taste
1 tablespoon olive oil
1 tablespoon butter
1 clove garlic, minced
Toppings
1½ cups shredded cheddar cheese
½ cup cooked bacon, crumbled
½ cup sour cream
¼ cup green onions, sliced
Instructions
Preheat oven
Preheat to 425°F (220°C). Line a baking sheet with parchment paper.Cook the potatoes
Boil baby potatoes in salted water 15–20 minutes until fork-tender.
Drain and let cool slightly.Smash the potatoes
Place potatoes on baking sheet.
Smash gently with the bottom of a glass.Season & roast
Drizzle with olive oil and season with salt, pepper, garlic powder, and paprika.
Roast 25–30 minutes, flipping once, until crispy and golden.Cook the steak
Season steak with salt and pepper.
Heat olive oil and butter in a skillet over medium-high heat.
Sear steak 3–4 minutes per side (or to desired doneness).
Add garlic during last minute.
Rest steak 5 minutes, then dice into small pieces.Assemble
Top each potato with diced steak, cheddar cheese, and bacon.Melt the cheese
Return to oven 5–7 minutes until cheese is melted and bubbly.Finish & serve
Add a dollop of sour cream and sprinkle with green onions.
Tips & Variations
Extra crispy: Broil potatoes 2–3 minutes before topping
Spicy: Add jalapeños or chipotle seasoning
Cheese swap: Pepper jack or smoked gouda
Sauce idea: Drizzle steak bites with garlic butter or steak sauce
