π Ingredients
4 slices bread (sourdough, Texas toast, or white bread)
4β6 slices bacon
1 cup shredded cheese (sharp cheddar recommended)
Optional blend: cheddar + mozzarella or provolone
Β½ cup dill pickle slices, well drained and patted dry
2 tablespoons butter, softened
Optional add-ins:
1 tablespoon cream cheese (extra creamy)
Β½ teaspoon garlic powder
Pinch of black pepper
Dijon mustard or ranch dressing (thin spread)

Cook the Bacon
Cook bacon in a skillet over medium heat until crispy.
Drain on paper towels and set aside.
Prep the Pickles
Pat pickle slices dry thoroughly to avoid soggy sandwiches.
Assemble the Sandwiches
Butter one side of each bread slice.
On the unbuttered side:
Sprinkle a layer of cheese
Add bacon slices
Add dill pickle slices
Optional: small spread of cream cheese or Dijon
Top with more cheese
Close sandwich with buttered side facing out.
Grill
Heat skillet or griddle over medium-low heat.
Cook sandwiches 3β4 minutes per side, pressing lightly, until bread is golden and cheese is fully melted.
Serve
Remove from skillet, rest 1 minute, slice, and serve hot.
