Fresh Cucumber and Tomato Salad

🛒 Ingredients (Serves 4)

  • 2 large cucumbers (sliced)

  • 3 medium tomatoes (chopped or sliced)

  • ½ small red onion (thinly sliced)

  • 2 tablespoons fresh parsley or dill (chopped)

  • 2 tablespoons olive oil

  • 1 tablespoon lemon juice (or red wine vinegar)

  • ½ teaspoon salt (adjust to taste)

  • ¼ teaspoon black pepper

  • Optional: ½ cup feta cheese (crumbled)


👩‍🍳 Instructions

  1. Prepare the vegetables
    Wash and slice the cucumbers, chop the tomatoes, and thinly slice the red onion.

  2. Combine
    Add cucumbers, tomatoes, onion, and herbs to a large bowl.

  3. Make the dressing
    In a small bowl, whisk together olive oil, lemon juice (or vinegar), salt, and pepper.

  4. Toss
    Pour dressing over the vegetables and gently toss until evenly coated.

  5. Add optional toppings
    Sprinkle feta cheese on top if desired.

  6. Chill & serve
    Let sit in the refrigerator for 15–30 minutes before serving for best flavor.
