    🛒 Ingredients (Serves 4)

    For the Stir-Fry

    • 1 lb (450 g) sirloin steak, thinly sliced against the grain

    • 2 tbsp soy sauce

    • 1 tbsp cornstarch

    • 2 tbsp vegetable oil (divided)

    • 3 cloves garlic, minced

    • 1-inch piece fresh ginger, grated

    • 1 red bell pepper, sliced thin

    • 1 cup snow peas or sugar snap peas

    • 2 cups baby spinach or bok choy

    Honey-Ginger Glaze

    • ¼ cup honey

    • 3 tbsp soy sauce

    • 1 tbsp rice vinegar or lime juice

    • ½ tsp crushed red pepper flakes (optional for heat)

    • 1 tsp sesame oil

    Garnish

    • 2 green onions, sliced

    • 1 tsp toasted sesame seeds


    🔪 Instructions

    1. Marinate the Beef

    • Toss sliced sirloin with 2 tbsp soy sauce and 1 tbsp cornstarch until evenly coated.

    • Let sit 10–15 minutes while preparing vegetables.


    2. Make the Honey-Ginger Glaze

    • In a small bowl, whisk together honey, soy sauce, rice vinegar, red pepper flakes, and sesame oil.

    • Set aside.


    3. Cook the Beef

    • Heat 1 tbsp oil in a large skillet or wok over high heat.

    • Add beef in a single layer and sear 1–2 minutes per side until browned but not fully cooked.

    • Remove beef and set aside.


    4. Stir-Fry the Vegetables

    • Add remaining 1 tbsp oil to the pan.

    • Sauté garlic and ginger 30 seconds until fragrant.

    • Add bell pepper and snow peas; stir-fry 2–3 minutes until crisp-tender.

    • Add greens and cook 1–2 minutes until just wilted.


    5. Combine & Glaze

    • Return beef to the pan.

    • Pour in the honey-ginger glaze.

    • Toss everything together over medium heat 1–2 minutes until beef is cooked through and sauce is caramelized slightly.


    6. Serve

    • Transfer to a serving platter.

    • Garnish with sliced green onions and sesame seeds.

    • Serve hot over steamed rice, noodles, or quinoa.
