Greek Shrimp Gyro Wrap Bowl with Creamy Garlic Feta
A fresh Mediterranean-inspired bowl packed with juicy seasoned shrimp, crisp veggies, fluffy rice (or pita), and a rich garlic feta sauce.
Ingredients (Serves 4)
Shrimp Marinade
1 lb (450g) large shrimp, peeled & deveined
2 tbsp olive oil
3 cloves garlic, minced
1 tsp dried oregano
1 tsp smoked paprika
½ tsp ground cumin
½ tsp salt
¼ tsp black pepper
Juice of ½ lemon
Bowl Base
2 cups cooked jasmine or basmati rice (or quinoa / warm pita slices)
1 cup cherry tomatoes, halved
1 cup cucumber, diced
¼ red onion, thinly sliced
½ cup kalamata olives, sliced
½ cup crumbled feta cheese
Fresh parsley or dill, chopped
Creamy Garlic Feta Sauce
¾ cup plain Greek yogurt
½ cup feta cheese, crumbled
2 cloves garlic
1 tbsp olive oil
1 tbsp lemon juice
1–2 tbsp water (to thin)
Black pepper to taste
Blend all sauce ingredients until smooth and creamy. Adjust thickness with water as needed.
Instructions
1. Marinate the Shrimp
In a bowl, combine olive oil, garlic, oregano, paprika, cumin, salt, pepper, and lemon juice.
Add shrimp and toss well. Marinate for 15–30 minutes.
2. Cook the Shrimp
Heat a skillet over medium-high heat.
Cook shrimp 2–3 minutes per side until pink and lightly charred.
Remove immediately to avoid overcooking.
3. Prepare the Base
Cook rice according to package instructions if not already prepared.
Chop vegetables and set aside.
4. Assemble the Bowl
Divide rice among bowls.
Top with shrimp, tomatoes, cucumber, onion, olives, and feta.
Drizzle generously with creamy garlic feta sauce.
Garnish with fresh herbs and an extra squeeze of lemon if desired.
To Make It a Wrap Instead
Warm large pita or flatbread.
Spread sauce down the center.
Add shrimp, veggies, feta, and optional rice.
Fold tightly and wrap in foil.
