Greek Chicken Souvlaki Bowls with Spicy Garlic Sauce

Ingredients
For the Greek Chicken Souvlaki
1½ lb (700 g) boneless skinless chicken breast or thighs, cut into bite-size pieces
3 tbsp olive oil
3 tbsp lemon juice
3 garlic cloves, minced
1 tsp dried oregano
1 tsp paprika
½ tsp cumin
½ tsp black pepper
1 tsp salt
For the Bowl Base
2 cups cooked rice (white, brown, or jasmine)
1 cup cherry tomatoes, halved
1 cucumber, diced
½ red onion, thinly sliced
1 cup shredded lettuce
½ cup crumbled feta cheese
¼ cup chopped parsley
For the Spicy Garlic Sauce
½ cup Greek yogurt
2 tbsp mayonnaise
2 garlic cloves, finely minced
1 tbsp lemon juice
1 tbsp olive oil
1–2 tsp hot sauce or chili paste
½ tsp paprika
Salt to taste
Instructions
1. Marinate the Chicken
In a large bowl mix:
olive oil
lemon juice
garlic
oregano
paprika
cumin
salt and pepper
Add the chicken pieces and toss well to coat.
Cover and marinate 30 minutes to 2 hours in the refrigerator.
2. Cook the Chicken
Grill Method (Best Flavor)
Thread chicken onto skewers.
Grill over medium-high heat 10–12 minutes, turning occasionally until cooked through.
Skillet Method
Heat 1 tbsp olive oil in a pan over medium-high heat.
Cook chicken 6–8 minutes, stirring occasionally, until golden and fully cooked.
3. Make the Spicy Garlic Sauce
In a small bowl whisk together:
Greek yogurt
mayonnaise
minced garlic
lemon juice
olive oil
hot sauce
paprika
salt
Mix until smooth and creamy. Refrigerate until ready to serve.
4. Assemble the Bowls
Divide the rice among 4 bowls.
Top each bowl with:
grilled chicken souvlaki
tomatoes
cucumber
red onion
lettuce
feta cheese
parsley
Drizzle generously with spicy garlic sauce.
