Savory Garlic-Infused Chicken Lo Mein
📝 Ingredients
For the Chicken:
- 2 boneless chicken breasts (thinly sliced)
- 1 tbsp soy sauce
- 1 tsp cornstarch
- 1 tsp black pepper
For the Sauce:
- 3 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp hoisin sauce
- 1 tsp sesame oil
- 1 tsp sugar or honey
- ½ cup chicken broth or water
For the Noodles & Veggies:
- 250g lo mein noodles (or spaghetti)
- 2 tbsp oil (vegetable or sesame)
- 4–5 garlic cloves (finely chopped)
- 1 cup cabbage (shredded)
- 1 carrot (julienned)
- 1 bell pepper (sliced)
- 1 cup mushrooms (sliced)
- 2 green onions (chopped)
🔪 Instructions
1️⃣ Cook the Noodles
- Boil noodles according to package instructions.
- Drain and toss with a little oil to prevent sticking.
2️⃣ Marinate the Chicken
- In a bowl, mix chicken with soy sauce, cornstarch, and black pepper.
- Let it sit for 10–15 minutes.
3️⃣ Prepare the Sauce
- In a small bowl, mix soy sauce, oyster sauce, hoisin sauce, sesame oil, sugar, and broth.
- Set aside.
4️⃣ Cook the Chicken
- Heat 1 tbsp oil in a wok or large pan over high heat.
- Stir-fry chicken until cooked through (4–5 minutes).
- Remove and set aside.
5️⃣ Stir-Fry the Vegetables
- In the same pan, add remaining oil.
- Add garlic and sauté briefly (don’t burn).
- Add cabbage, carrots, bell pepper, and mushrooms.
- Stir-fry on high heat for 3–4 minutes until slightly crisp.
6️⃣ Combine Everything
- Return chicken to the pan.
- Add cooked noodles and sauce.
- Toss everything well for 2–3 minutes until coated and heated through.
7️⃣ Final Touch
- Add green onions and mix.
- Taste and adjust seasoning if needed.
