🥬🧀 Spinach & Cheese Crustless Quiche

A simple, low-carb, gluten-free quiche without a crust. It’s creamy, cheesy, and packed with spinach—perfect for breakfast, brunch, or a light dinner.

🥚 Ingredients

  • 6 large eggs

  • 1 cup (240 ml) milk or heavy cream

  • 1 cup shredded cheese (cheddar, mozzarella, or Swiss)

  • 1½ cups fresh spinach (chopped)

  • ¼ cup onion (finely chopped)

  • 1 tbsp butter or olive oil

  • ½ tsp salt

  • ¼ tsp black pepper

  • ¼ tsp garlic powder (optional)


👨‍🍳 Instructions

1️⃣ Preheat Oven

  • Preheat oven to 180°C (350°F).

  • Grease a 9-inch baking dish or pie dish with butter or oil.


2️⃣ Cook the Vegetables

  1. Heat butter or olive oil in a pan over medium heat.

  2. Sauté the onion for 2–3 minutes until soft.

  3. Add spinach and cook until wilted (about 1 minute).

  4. Remove from heat.


3️⃣ Prepare the Egg Mixture

  1. In a bowl, whisk together:

    • eggs

    • milk or cream

    • salt

    • pepper

    • garlic powder


4️⃣ Assemble

  1. Spread the spinach and onion mixture in the baking dish.

  2. Sprinkle the shredded cheese evenly on top.

  3. Pour the egg mixture over everything.


5️⃣ Bake

  • Bake for 35–40 minutes until the center is set and the top is lightly golden.


6️⃣ Cool & Serve

  • Let it cool 5–10 minutes before slicing.

  • Serve warm.


🍽 Optional Add-Ins

You can customize it with:

  • Cooked bacon or ham 🥓

  • Mushrooms 🍄

  • Feta cheese

  • Bell peppers


💡 Tip:
For a fluffier quiche, use half milk and half heavy cream.
