Brazilian Lemon Truffles (Lemon Brigadeiros)

Makes: 20–24 truffles

Ingredients

  • 1 can (14 oz / 395 g) sweetened condensed milk
  • 2 tbsp unsalted butter
  • 3 tbsp fresh lemon juice
  • 1 tbsp lemon zest
  • ½ cup powdered sugar (for coating)

Instructions

  1. Cook the mixture
    • In a nonstick saucepan, combine the sweetened condensed milk and butter.
    • Cook over medium-low heat, stirring constantly.
    • After about 8–10 minutes, the mixture will thicken.
  2. Add lemon
    • Stir in the lemon juice and lemon zest.
    • Continue cooking for another 2–4 minutes until the mixture is very thick and pulls away from the sides of the pan.
  3. Cool
    • Transfer the mixture to a lightly greased bowl or plate.
    • Cover with plastic wrap touching the surface.
    • Refrigerate for at least 2 hours or until firm.
  4. Shape
    • Lightly grease your hands with butter.
    • Scoop about 1 tablespoon of the mixture and roll into balls.
  5. Coat
    • Roll each truffle in powdered sugar until completely covered.
  6. Serve
    • Chill for 15–20 minutes before serving for the best texture.

Optional Variations

  • Roll in shredded coconut instead of powdered sugar.
  • Use lime juice and zest for a lime version.
  • Add a drop of vanilla extract for extra flavor.

Storage

  • Refrigerate in an airtight container for up to 1 week.
  • Freeze for up to 2 months.
