    These fluffy, buttery biscuits are stuffed with melty mozzarella and brushed with garlic butter for the ultimate cheesy pull.

    Ingredients

    For the Biscuits

    • 2 cups (250 g) all-purpose flour
    • 1 tbsp baking powder
    • 1 tsp sugar
    • ½ tsp salt
    • ½ tsp garlic powder
    • ½ tsp Italian seasoning (optional)
    • ½ cup (115 g) cold unsalted butter, cubed
    • 1 cup (100 g) shredded cheddar cheese
    • ¾ cup (180 ml) cold buttermilk

    Filling

    • 8 cubes (about 1-inch each) low-moisture mozzarella cheese

    Garlic Butter Topping

    • 3 tbsp butter, melted
    • 2 cloves garlic, minced
    • 1 tbsp fresh parsley, finely chopped
    • 2 tbsp grated Parmesan cheese
    • Pinch of salt

    Instructions

    1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.
    2. Mix dry ingredients: In a large bowl, whisk together flour, baking powder, sugar, salt, garlic powder, and Italian seasoning.
    3. Cut in butter: Add the cold butter and work it into the flour using a pastry cutter or your fingertips until the mixture resembles coarse crumbs.
    4. Add cheese: Stir in the shredded cheddar.
    5. Make the dough: Pour in the buttermilk and gently stir until the dough just comes together. Avoid overmixing.
    6. Stuff the biscuits: Divide the dough into 8 equal portions. Flatten each into a circle, place a mozzarella cube in the center, and wrap the dough completely around the cheese, sealing well.
    7. Bake: Arrange on the prepared baking sheet and bake for 15–18 minutes, or until puffed and golden brown.
    8. Prepare garlic butter: While baking, combine melted butter, garlic, parsley, Parmesan, and a pinch of salt.
    9. Finish: Brush the hot biscuits generously with the garlic butter as soon as they come out of the oven.
    10. Rest: Let cool for 5 minutes before serving to keep the cheese deliciously gooey.

    Tips for Perfect Cheese Pull

    • Freeze the mozzarella cubes for 20–30 minutes before stuffing.
    • Use low-moisture mozzarella to reduce leaking.
    • Don’t overwork the dough; gentle mixing keeps the biscuits light and fluffy.
    • Serve warm for the best stretchy cheese center.
