Cheesy BBQ Stuffed Meatloaf Muffins

- 2 lbs (900g) lean ground beef
- 1½ cups shredded cheddar cheese, divided
- 1 cup plain breadcrumbs
- 1 large egg
- ½ cup ketchup
- 2 tbsp BBQ sauce (optional, for extra flavor)
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp smoked paprika
- 1 tsp Italian seasoning
- 1 tsp salt
- ½ tsp black pepper
- 2 tbsp Worcestershire sauce (optional)
Glaze
- ¼ cup ketchup
- 2 tbsp BBQ sauce
- 1 tbsp brown sugar (optional)
👩🍳 Instructions
1. Preheat
Preheat oven to 375°F (190°C).
Grease a standard 12-cup muffin pan.
2. Mix
In a large bowl combine:
- Ground beef
- Breadcrumbs
- Egg
- ½ cup cheddar cheese
- Ketchup
- BBQ sauce
- Garlic powder
- Onion powder
- Smoked paprika
- Italian seasoning
- Salt and pepper
- Worcestershire sauce
Mix until just combined.
3. Fill
Scoop about 2 tablespoons of meat mixture into each muffin cup.
Press a small well into the center.
Add about 1 tablespoon shredded cheddar into each well.
Cover with more meat mixture and seal the cheese inside.
4. Bake
Bake for 20 minutes.
5. Glaze
Mix together:
- Ketchup
- BBQ sauce
- Brown sugar
Brush generously over each meatloaf muffin.
Return to the oven for 5–10 more minutes, until cooked through (internal temperature reaches 160°F / 71°C).
6. Serve
Let rest for 5 minutes before removing from the pan.
Serve with:
