Roasted Tomato & Garlic Soup with Grilled Cheese

Ingredients
For the Soup
- 6–7 ripe tomatoes, halved
- 1 large red onion, quartered
- 1 whole garlic bulb or 6 garlic cloves
- 2–3 tbsp olive oil
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp salt
- ½ tsp black pepper
- 2 cups vegetable or chicken broth
- ½ cup heavy cream
- 1 tbsp tomato paste (optional)
For the Grilled Cheese
- 8 slices bread
- 4–6 slices cheddar or mozzarella cheese
- 2 tbsp butter
Instructions
- Preheat oven to 425°F (220°C).
- Arrange tomatoes, red onion, and garlic on a baking tray.
- Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper.
- Roast for 30–35 minutes, until the tomatoes and onions are soft and slightly caramelized.
- Transfer the roasted vegetables to a blender. Add the broth and blend until smooth.
- Pour the soup into a pot. Stir in the cream and tomato paste, if using.
- Simmer over low heat for 5–10 minutes. Adjust salt and pepper to taste.
- For the grilled cheese, butter the bread and place cheese between two slices.
- Cook in a skillet over medium heat for 2–3 minutes per side, until golden brown and the cheese is melted.
- Serve the hot tomato soup with the crispy grilled cheese sandwiches.
Tip: Add a drizzle of cream and a sprinkle of dried herbs on top of the soup just before serving for the same beautiful finish as in the picture.
