Roasted Tomato & Garlic Soup with Grilled Cheese

Ingredients

For the Soup

  • 6–7 ripe tomatoes, halved
  • 1 large red onion, quartered
  • 1 whole garlic bulb or 6 garlic cloves
  • 2–3 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried basil
  • ½ tsp salt
  • ½ tsp black pepper
  • 2 cups vegetable or chicken broth
  • ½ cup heavy cream
  • 1 tbsp tomato paste (optional)

For the Grilled Cheese

  • 8 slices bread
  • 4–6 slices cheddar or mozzarella cheese
  • 2 tbsp butter

Instructions

  1. Preheat oven to 425°F (220°C).
  2. Arrange tomatoes, red onion, and garlic on a baking tray.
  3. Drizzle with olive oil and sprinkle with oregano, basil, salt, and pepper.
  4. Roast for 30–35 minutes, until the tomatoes and onions are soft and slightly caramelized.
  5. Transfer the roasted vegetables to a blender. Add the broth and blend until smooth.
  6. Pour the soup into a pot. Stir in the cream and tomato paste, if using.
  7. Simmer over low heat for 5–10 minutes. Adjust salt and pepper to taste.
  8. For the grilled cheese, butter the bread and place cheese between two slices.
  9. Cook in a skillet over medium heat for 2–3 minutes per side, until golden brown and the cheese is melted.
  10. Serve the hot tomato soup with the crispy grilled cheese sandwiches.

Tip: Add a drizzle of cream and a sprinkle of dried herbs on top of the soup just before serving for the same beautiful finish as in the picture.
