Slow Cooker Shredded Beef & Tender Cabbage Wedges
This hearty Slow Cooker Shredded Beef & Cabbage is the ultimate comfort-food dinner! Ingredients
For the Beef
- 3–3½ lb beef chuck roast
- 1 large head green cabbage
- 1 large yellow onion, sliced
- 4 cloves garlic, minced
- 2 cups beef broth
- 2 tbsp Worcestershire sauce
- 1 tbsp tomato paste
- 2 tbsp olive oil
- 1½ tsp kosher salt
- 1 tsp freshly ground black pepper
- 1 tsp smoked paprika
- 1 tsp onion powder
- 1 tsp garlic powder
- 1 tsp dried thyme
- ½ tsp dried rosemary
- 2 bay leaves
For the Cabbage
- 2 tbsp butter
- 1 tbsp olive oil
- ½ tsp salt
- ½ tsp black pepper
- ½ tsp garlic powder
- ½ tsp smoked paprika
Optional Additions
- 2–3 carrots, cut into large pieces
- 2 tbsp apple cider vinegar
- 1 tbsp brown sugar
- Fresh parsley for garnish
- Red pepper flakes for a little heat
Instructions
1. Prepare the Beef
Pat the chuck roast dry with paper towels. This helps it brown properly and gives the finished dish a deeper flavor.
Season all sides generously with salt, black pepper, smoked paprika, onion powder, garlic powder, thyme, and rosemary.
2. Sear the Roast
Heat olive oil in a large skillet or Dutch oven over medium-high heat.
Place the seasoned chuck roast into the hot pan and sear for approximately 3–4 minutes per side, until deeply browned.
Don’t skip this step if you have the time—the browned crust adds a wonderful savory flavor to the slow-cooked beef.
Transfer the roast to your slow cooker.
3. Prepare the Flavor Base
Using the same skillet, add the sliced onion and cook for about 2–3 minutes.
Add the minced garlic and cook for another 30–60 seconds.
Stir in the tomato paste and cook for about 1 minute.
Pour in the beef broth and Worcestershire sauce. Scrape the browned bits from the bottom of the skillet, then pour this flavorful mixture over the beef.
4. Slow Cook the Beef
Add the bay leaves and optional carrots.

5. Prepare the Cabbage
While the beef is cooking, cut the cabbage into 6–8 large wedges, keeping a little of the core attached to each wedge so they hold together.
About 1½–2 hours before the beef is finished, carefully arrange the cabbage wedges around and on top of the beef.
Drizzle the cabbage with olive oil and melted butter. Sprinkle with salt, black pepper, garlic powder, and smoked paprika.
Cover and continue cooking until the cabbage is tender but still holds its shape.
6. Add Extra Flavor
For a slightly tangy finish, drizzle the cabbage with 1–2 tablespoons of apple cider vinegar during the final 20–30 minutes of cooking.
The acidity cuts through the richness of the beef and makes the cabbage especially delicious.
7. Shred the Beef
Remove the cooked beef from the slow cooker and place it on a large cutting board.
Let it rest for 10 minutes.
Using two forks, shred the beef into large, juicy pieces. Remove any large pieces of fat or connective tissue.
Return some of the shredded beef to the slow cooker juices and gently toss it together.
8. Optional Caramelized Finish

Place them under a high broiler for 3–5 minutes, watching carefully, until the edges become golden brown and slightly charred.
