Sheet Pan Kebabs

This easy Middle Eastern–style recipe uses seasoned ground beef baked on a sheet pan, then served in warm flatbreads with fresh toppings.
Ingredients
For the Kebabs
- 500 g (1.1 lb) ground beef
- 1 small red onion, finely chopped
- 2 cloves garlic, minced
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- 1 teaspoon chili flakes
- 1 teaspoon dried oregano
- 1 teaspoon dried parsley
- Oil spray
For Serving
- 4 flatbreads or wraps
- Sliced red onion
- ½ cup crumbled feta
- Cherry tomatoes, chopped
- Greek yogurt or mayonnaise
- Hot sauce
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the ground beef, red onion, garlic, salt, black pepper, smoked paprika, cumin, chili flakes, oregano, and parsley. Mix until well combined.
- Line a sheet pan with parchment paper and lightly spray it with oil.
- Transfer the beef mixture to the pan. Place another sheet of parchment paper over the meat and press it down with a spatula or the bottom of another tray until the meat is about ½ inch thick.
- Remove the top parchment paper. Using a knife or bench scraper, score the meat into 8 strips, cutting about halfway through.
- Bake for 12–15 minutes, until browned and cooked through. For extra browning, broil/grill for the final 5 minutes, watching carefully.
- Remove from the oven and cut completely through the scored strips.
- Warm the flatbreads and fill each with 2 kebab strips.
- Add sliced red onion, chopped cherry tomatoes, crumbled feta, Greek yogurt or mayonnaise, and hot sauce.
- Fold or roll the flatbread and serve immediately.
Tip: The beef will shrink while cooking and some liquid may collect on the tray; that’s normal.
