Cheesy Tomato Tortellini Bake

There are some dinners that just make you feel good before you even take the first bite. For me, a cheesy pasta bake is definitely one of them.

I made this Cheesy Tomato Tortellini Bake for my family last weekend after one of those days when I wanted dinner to be comforting but absolutely did not want to spend hours cooking. I had some cheese tortellini sitting in the fridge, a jar of tomato sauce in the pantry, and plenty of mozzarella in the refrigerator.

Here’s what you’ll need:

  • 20 ounces refrigerated cheese tortellini
  • 3 cups tomato or marinara sauce
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cloves garlic, finely minced
  • 1 tablespoon olive oil
  • 1 teaspoon Italian seasoning
  • ½ teaspoon dried basil
  • ¼ teaspoon red pepper flakes, optional
  • Salt, to taste
  • Black pepper, to taste
  • Fresh basil or parsley, for garnish

I usually use refrigerated tortellini because it’s convenient, but frozen tortellini can work too. Just check the package directions and adjust the cooking time if necessary.

How to Make Cheesy Tomato Tortellini Bake

Step 1: Preheat the oven

Start by preheating your oven to 375°F (190°C).

Lightly grease a medium-sized baking dish with olive oil or cooking spray.

Step 2: Prepare the tomato sauce

Heat the olive oil in a saucepan over medium heat.

Add the minced garlic and cook for about 30 seconds. You don’t want it to brown too much; we’re just looking for that lovely garlicky aroma.

Add the tomato sauce, Italian seasoning, dried basil, red pepper flakes, a little salt, and black pepper.

Give everything a good stir and let the sauce simmer for about 5 minutes.

Step 3: Add the tortellini

This is where the recipe gets wonderfully easy.

Add the refrigerated tortellini directly to the warm sauce and gently stir until the pasta is coated.

There’s no need to boil refrigerated tortellini beforehand. One less pot to wash is always a win in my kitchen.

Step 4: Assemble everything

Pour the saucy tortellini into your prepared baking dish.

Spread it out evenly, then sprinkle the mozzarella and Parmesan over the top.

I tend to add a generous layer of mozzarella because, well, I haven’t yet met anyone who complained about too much melted cheese.

Step 5: Bake

Cover the dish with aluminum foil and bake for about 20 minutes.

Remove the foil and continue baking for another 10–15 minutes, until the cheese is melted, bubbling, and beautifully golden.

If you want those slightly crispy golden spots on top, broil it for the final 1–2 minutes. Keep an eye on it, though. Cheese has a way of going from “perfect” to “oops” very quickly.

Step 6: Let it rest

Once it’s out of the oven, give the bake about 5 minutes to rest.

I know this is difficult when the whole kitchen smells amazing, but those few minutes help the sauce settle and make serving much easier.

Finish with fresh basil or parsley and serve warm.

Easy Ways to Change It Up

One thing I love about this recipe is how flexible it is.

Want some vegetables? Add sautéed mushrooms, spinach, zucchini, or bell peppers.

Want meat? Cooked Italian sausage, shredded chicken, or ground beef would all work nicely.

Want it spicy? Add more red pepper flakes or a little crushed chili.

You can even swap some of the mozzarella for provolone or fontina if you have either one on hand.

Honestly, this is the kind of recipe where you can open the refrigerator, see what needs using, and make it your own.

What I Serve With It

Because the tortellini bake is already filling, I don’t like making too many complicated side dishes.

A simple green salad is my favorite. Something crisp and fresh balances the rich tomato sauce and cheese.

And then there’s garlic bread.

I don’t think garlic bread is technically necessary, but if you have a warm, cheesy tomato sauce sitting in front of you, leaving it behind feels like a missed opportunity.

Can I Make It Ahead?

Absolutely.

You can assemble the dish earlier in the day, cover it, and keep it refrigerated until you’re ready to bake.

If you’re putting it into the oven straight from the refrigerator, give it a little extra time to heat through.

Leftovers keep well in the refrigerator for 3–4 days in an airtight container. Reheat them in the microwave for a quick lunch or warm them in the oven if you want the cheese on top to get bubbly again.
