Slow Cooker Beef Enchiladas: Cheesy, Saucy & Comforting
There are some dinners that just feel like a warm hug, and these slow cooker beef enchiladas are definitely one of them. I first came across the idea from a friend who told me that I absolutely had to try making enchiladas in the slow cooker. I was a little skeptical at first—enchiladas always seemed like something that needed to come together in the oven—but I gave it a try.

For the Beef Filling
1 lb (450 g) ground beef
1 small onion, finely chopped
2 cloves garlic, minced
1 teaspoon chili powder
1 teaspoon ground cumin
½ teaspoon smoked paprika
½ teaspoon salt
¼ teaspoon black pepper
½ cup diced tomatoes
¼ cup chopped green chiles, optional

8 small flour or corn tortillas
2 cups enchilada sauce
1½ cups shredded Mexican-blend cheese or cheddar
½ cup shredded mozzarella, optional

How to Make Slow Cooker Beef Enchiladas
1. Cook the Beef
Heat a skillet over medium heat and add the ground beef. Cook until browned, breaking it apart with a wooden spoon as it cooks.
Add the chopped onion and garlic and cook for another 2–3 minutes, until the onion softens.
Stir in the chili powder, cumin, smoked paprika, salt, and black pepper. Add the diced tomatoes and green chiles if using.
Cook for another couple of minutes, then take the mixture off the heat.
2. Prepare the Slow Cooker
Spread a thin layer of enchilada sauce over the bottom of your slow cooker. This little step makes a difference because it keeps the tortillas from sticking and gives them plenty of flavor as they cook.
3. Fill the Tortillas
Spoon some of the beef mixture down the center of each tortilla.
Roll each tortilla tightly and place it seam-side down in the slow cooker.
Continue until you’ve used all the filling.
4. Add the Sauce and Cheese
Pour the remaining enchilada sauce evenly over the rolled tortillas.
Then comes my favorite part—cover everything generously with shredded cheese.
Don’t be shy with it. That golden, bubbling cheese on top is what makes this dinner so irresistible.
5. Slow Cook
Cover and cook on LOW for about 3–4 hours, or until everything is hot and the cheese is completely melted.
Try not to keep lifting the lid while it’s cooking. I know it’s tempting, especially when the kitchen starts smelling amazing, but keeping the lid closed helps maintain the heat.
6. Garnish and Serve
Once they’re ready, sprinkle fresh cilantro or parsley over the top.
Let the enchiladas rest for a few minutes before serving. Then scoop one out and watch all that cheesy sauce stretch across the plate.

Don’t overfill the tortillas.
It’s tempting to add a huge spoonful of beef, but smaller portions make the enchiladas easier to roll and help prevent them from falling apart.
Use plenty of sauce.
The sauce keeps the tortillas tender and gives the whole dish that delicious, rich flavor.
Don’t skip the cheese.
Well, you can—but I wouldn’t. 😄 A combination of cheddar and mozzarella gives you both flavor and that beautiful melted texture.
Add some heat if your family likes spicy food.
Jalapeños, extra green chiles, or a pinch of cayenne work beautifully.
