Loaded Mediterranean Chicken Shawarma Board with Lemon Feta & Olives

There are some meals that are less about following a recipe and more about putting a little bit of everything you love onto one big platter. This Loaded Mediterranean Chicken Shawarma Board is exactly that kind of meal.

I made this for my family last weekend after a friend recommended trying a shawarma-style dinner at home instead of ordering takeout. I decided to turn it into a big sharing board with warm spiced chicken, creamy lemon feta, juicy tomatoes, crunchy vegetables, olives, and plenty of warm pita.

And honestly? Everyone loved it.

There was something about putting the whole board in the middle of the table and letting everyone build their own plate that made dinner feel special without actually being difficult. My family kept going back for “just one more piece” of chicken, which is always a pretty good sign!

This is now one of those recipes I like to make when I’m having people over, on lazy weekends, or whenever I’m craving something colorful, fresh, and comforting at the same time.

Ingredients
For the Chicken Shawarma
1½ lb (680 g) boneless, skinless chicken thighs
2 tablespoons olive oil
1 tablespoon lemon juice
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon smoked paprika
1 teaspoon ground coriander
½ teaspoon turmeric
½ teaspoon dried oregano
½ teaspoon salt
¼ teaspoon black pepper
¼ teaspoon cayenne pepper, optional
For the Lemon Feta
6 oz (170 g) feta cheese
2 tablespoons Greek yogurt
1 tablespoon lemon juice
1 teaspoon lemon zest
1 tablespoon olive oil
1 small garlic clove, finely grated
Black pepper, to taste
For the Board
4–6 warm pita breads
1 cup cherry tomatoes, halved
1 cucumber, sliced
½ red onion, thinly sliced
½ cup Kalamata olives
½ cup hummus
½ cup roasted red peppers
Fresh parsley
Fresh mint, optional
Lemon wedges
Extra-virgin olive oil
How to Make It
1. Marinate the Chicken

Add the chicken thighs to a large bowl.

Mix together the olive oil, lemon juice, garlic, cumin, paprika, coriander, turmeric, oregano, salt, black pepper, and cayenne.

Pour the mixture over the chicken and toss until every piece is nicely coated.

If you have time, let it marinate for 30 minutes to 2 hours in the refrigerator. Even a short marinade makes a noticeable difference.

2. Cook the Chicken

Heat a large skillet or grill pan over medium-high heat.

Add the chicken and cook until beautifully browned on the outside and cooked through in the center, turning occasionally.

The edges should get those slightly charred, caramelized bits that make shawarma so good.

Let the chicken rest for about 5 minutes, then slice it into bite-sized pieces.

And please don’t skip the resting time. I used to cut into chicken immediately, but letting it rest keeps it much juicier.

3. Make the Lemon Feta

Add the feta, Greek yogurt, lemon juice, lemon zest, olive oil, garlic, and black pepper to a bowl.

Mash everything together with a fork until creamy but still slightly chunky.

Taste it and add a little more lemon if you like a brighter flavor.

The first time I made this, I wasn’t sure about adding lemon zest to feta. Now I wouldn’t leave it out. It gives the creamy cheese such a fresh, almost summery flavor.

4. Warm the Pitas

Warm the pita breads briefly in a dry skillet, oven, or microwave.

Keep them wrapped in a clean kitchen towel so they stay soft while you assemble the board.

5. Build Your Shawarma Board

Now comes the fun part.

Place the sliced chicken in the center or on one side of a large serving board.

Add bowls of lemon feta and hummus, then arrange the tomatoes, cucumber, red onion, olives, and roasted peppers around them.

Tuck warm pita pieces into any empty spaces.

Finish with fresh parsley, mint, lemon wedges, and a generous drizzle of olive oil.

Don’t worry about making it perfect. In fact, I think these boards look better when they feel abundant and a little rustic.

My Favorite Way to Eat It

I like tearing off a piece of warm pita and spreading it with hummus first.

Then I add a little chicken, a spoonful of lemon feta, cucumber, tomato, a couple of olives, and a few pieces of red onion.

Fold it up and take a bite.

You get the warm, smoky spices from the chicken, creamy feta, salty olives, fresh vegetables, and soft pita all at once.

That’s the magic of this board.

Easy Swaps & Additions

The beauty of a Mediterranean board is that you really don’t have to follow it rigidly.

Try adding:

Tzatziki
Pickled turnips
Sliced avocado
Roasted zucchini
Grilled eggplant
Marinated artichokes
Pickled red onions
Fresh dill
Toasted pine nuts

You can also swap chicken thighs for chicken breast if that’s what you have.

For a vegetarian board, leave out the chicken and add grilled halloumi, roasted chickpeas, falafel, or extra hummus.

Make It for a Crowd

This is one of my favorite recipes when friends or family are coming over because most of the components can be prepared ahead.

Make the chicken marinade earlier in the day, prepare the lemon feta, chop the vegetables, and arrange everything shortly before serving.

Then instead of standing in the kitchen plating individual meals, put the whole board on the table and let everyone help themselves.

It’s much more relaxed—and much more fun.

A Weekend Dinner Worth Sharing

What started as a friend’s simple suggestion turned into one of my favorite ways to serve chicken.
