Crispy Caprese Chicken Cutlets with Burrata & Balsamic Glaze

Golden, crispy chicken cutlets topped with creamy burrata, juicy cherry tomatoes, fresh basil, and a sweet-tangy balsamic glaze—this is an absolutely irresistible dinner! The crunchy Parmesan-coated chicken pairs beautifully with the cool, creamy cheese and bright tomato topping.

🛒 Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • ½ cup all-purpose flour
  • 2 large eggs
  • 1 cup Italian-seasoned breadcrumbs
  • ½ cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp olive oil, for frying

For the Topping

  • 8 oz burrata cheese, divided
  • 1½ cups cherry tomatoes, halved
  • ¼ cup fresh basil, chopped
  • 1 tbsp extra-virgin olive oil
  • 1 tbsp balsamic glaze
  • 1 small garlic clove, minced
  • Salt and black pepper, to taste

👩‍🍳 Instructions

1. Prepare the chicken
Place each chicken breast between sheets of plastic wrap and gently pound until about ½-inch thick. Pat dry and season lightly with salt and pepper.

2. Set up the coating
Place flour in one shallow bowl. Beat the eggs in a second bowl. In a third bowl, combine breadcrumbs, Parmesan, garlic powder, Italian seasoning, paprika, salt, and pepper.

3. Bread the chicken
Coat each chicken cutlet in flour, dip into the beaten eggs, then press firmly into the Parmesan breadcrumb mixture. Make sure both sides are well coated.

4. Cook until golden
Heat olive oil in a large skillet over medium heat. Cook the chicken for about 4–5 minutes per side, depending on thickness, until deeply golden and the chicken reaches 165°F (74°C) internally. Transfer to a paper towel-lined plate.

5. Make the tomato topping
Combine halved cherry tomatoes, basil, garlic, olive oil, a pinch of salt, and black pepper in a bowl. Toss gently.

6. Assemble
Place the crispy chicken cutlets on a serving platter. Tear burrata into pieces and spoon it generously over each cutlet.

7. Add the tomatoes
Pile the fresh tomato-basil mixture over the burrata.

8. Finish with balsamic
Drizzle everything with balsamic glaze and a final splash of extra-virgin olive oil. Serve immediately while the chicken is crisp and warm.

✨ Pro Tips

  • Pound the chicken evenly so it cooks at the same rate.
  • For an extra-crispy crust, press the breadcrumbs firmly onto the chicken before frying.
  • Let the chicken rest for 2–3 minutes before adding the burrata.
  • Add the burrata just before serving so it stays creamy and cool.
  • A sprinkle of red pepper flakes adds a delicious little kick.
  • You can bake the breaded cutlets at 425°F (220°C) until golden and cooked through for a lighter version.

🍽️ Serving Ideas

Serve with a simple arugula salad, roasted asparagus, zucchini, garlic green beans, or crispy potatoes. For a beautiful dinner-party presentation, arrange the cutlets on a large platter and drizzle the balsamic glaze over everything just before serving.
