How to Make Sweet Potato Smash with Brie & Honey
1. Cook the sweet potatoes
Start by washing the sweet potatoes well. You can leave the skins on—they become wonderfully crisp in the oven.
Boil or steam the sweet potatoes until they are fork-tender. Depending on their size, this usually takes around 15–20 minutes.
Drain them and allow them to cool for a few minutes, just until they’re comfortable enough to handle.
2. Smash them
Preheat your oven to 220°C (425°F) and line a baking tray with parchment paper.
Place the sweet potatoes on the tray and gently press each one down with the bottom of a glass or a potato masher.
Don’t flatten them completely. I like leaving them a little thick because the middle stays soft while the edges get beautifully crisp.
3. Season and roast
Drizzle the smashed sweet potatoes with olive oil and sprinkle with salt and black pepper.
Add a little rosemary or thyme if you’re using it.
Roast for about 20–25 minutes, or until the edges are golden brown and crispy.
This is where the magic really happens. The kitchen starts smelling sweet, savory, and herby, and it’s usually when everyone starts asking, “When will it be ready?”
4. Add the Brie
Take the tray out of the oven and scatter the Brie pieces over the sweet potatoes.
Return the tray to the oven for another 3–5 minutes, just until the Brie becomes soft and melty.
You don’t want to completely lose the shape of the cheese, so keep an eye on it.
5. Drizzle with honey
Remove the tray from the oven and immediately drizzle the honey over the warm sweet potatoes and Brie.
Finish with chopped walnuts or pecans and, if you like a little heat, a tiny pinch of chili flakes.

Don’t skip the roasting.
The smashing itself isn’t what makes this recipe special—the high-heat roasting is. Give the sweet potatoes enough time to develop those crispy edges.
Use room-temperature Brie when possible.
It melts more evenly and quickly.
Don’t drown it in honey.
A little goes a long way. The sweet potatoes already have plenty of natural sweetness.
Add some heat.
A pinch of chili flakes is one of my favorite additions. The gentle heat makes the honey and Brie taste even better.
Try different toppings.
Pecans, walnuts, pumpkin seeds, or even a sprinkle of toasted sesame seeds can work beautifully.

This is definitely a weekend recipe in my house.
I love making it when friends or family are coming over because it feels more special than ordinary roasted vegetables without requiring hours in the kitchen. It also makes a wonderful side dish for a relaxed dinner.
