Ingredients

For the Black-Eyed Peas

  • 1 lb (450 g) dried black-eyed peas
  • 8 oz (225 g) smoked sausage or kielbasa, sliced
  • 4 slices bacon, chopped
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 medium bell pepper, diced
  • 2 celery stalks, diced
  • 1 can (14.5 oz) diced tomatoes
  • 6 cups chicken broth or vegetable broth
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried thyme
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • ½ teaspoon chili flakes, optional
  • 1 bay leaf
  • Salt, to taste
  • 2 tablespoons fresh parsley, chopped
  • 1–2 tablespoons olive oil, if needed

For the Rice

  • 1½ cups long-grain white rice
  • 2¼ cups water
  • ½ teaspoon salt
  • 1 teaspoon butter or olive oil

For Serving

  • Crusty bread
  • Fresh parsley or green onions
  • Hot sauce, optional

Step-by-Step Instructions

  1. Prepare the peas: Rinse the dried black-eyed peas and remove any damaged peas or debris. Soak them for 6–8 hours or overnight. Drain and rinse.
  2. Cook the bacon and sausage: Heat a large heavy pot over medium heat. Add the chopped bacon and cook until lightly crisp. Add the sliced sausage and cook for 3–4 minutes until browned.
  3. Sauté the vegetables: Add the onion, bell pepper, and celery. Cook for about 5 minutes until softened. Add the garlic and cook for another 30 seconds.
  4. Add tomatoes and seasoning: Stir in the diced tomatoes, smoked paprika, thyme, black pepper, paprika, chili flakes, and bay leaf.
  5. Add the peas: Add the drained black-eyed peas and chicken broth. Stir well.
  6. Simmer: Bring to a boil, then reduce the heat to low. Cover partially and simmer for about 50–70 minutes, or until the peas are tender. Stir occasionally and add a little extra broth if needed.
  7. Thicken the broth: For a thicker, creamier consistency like the dish shown, mash about ½ cup of the cooked peas against the side of the pot and stir them back into the broth.
  8. Season: Taste and add salt and additional black pepper as needed. Remove the bay leaf and stir in fresh parsley.

Make the Rice

  1. Rinse the rice until the water runs mostly clear.
  2. Add rice, water, salt, and butter to a saucepan.
  3. Bring to a boil, then cover and reduce heat to low.
  4. Cook for about 15 minutes.
  5. Turn off the heat and let it sit covered for 5 minutes. Fluff with a fork.

Serve

Spoon the hot rice onto a plate and ladle the black-eyed pea and sausage mixture alongside or over the rice. Serve with warm crusty bread and a little hot sauce if desired.

Healthy Benefits

  • Black-eyed peas provide plant-based protein and fiber.
  • Bell peppers, celery, onions, and tomatoes add vegetables and nutrients.
  • The combination of beans and rice makes a satisfying meal.
  • Using leaner sausage and reducing the bacon can lower the overall fat and sodium.

Pro Tip

For especially rich flavor, let the black-eyed peas simmer slowly rather than boiling rapidly. If using canned black-eyed peas, reduce the cooking time to about 25–30 minutes and use less broth.

Variations

  • Without pork: Use smoked turkey sausage or plant-based sausage.
  • Spicy: Add cayenne pepper or hot sauce.
  • Greens: Stir in chopped collard greens or spinach during the final 10 minutes.
  • Creamier: Mash more of the peas into the broth.
  • Vegetarian: Replace the sausage and bacon with smoked paprika and vegetable broth.

Storage

Refrigerate leftovers in an airtight container for up to 4 days. Reheat gently with a splash of broth or water.

Final Thought

This black-eyed pea and sausage dish is hearty, smoky, and comforting, especially when served over fluffy rice with crusty bread for soaking up the flavorful broth.
