How to Make Creamy Enchilada Chicken
1. Add the chicken to the slow cooker
Place the chicken breasts in the bottom of your slow cooker.
Sprinkle the chicken with chili powder, cumin, smoked paprika, salt, and black pepper.
If your chicken breasts are particularly thick, you can slice them horizontally to make them more uniform in size. This helps them cook evenly.
2. Make the creamy enchilada mixture
In a bowl, combine the enchilada sauce, cream of chicken soup, chicken broth, diced green chiles, onion, and garlic.
Pour the mixture over the chicken.
At this point, the slow cooker is already starting to smell good, but we’re not done yet.
3. Let the slow cooker work its magic
Cover and cook on LOW for 5–6 hours or HIGH for 2½–3½ hours, until the chicken is cooked through and tender.

Then sprinkle in the cheddar and Monterey Jack cheese.
Cover and cook for another 15–20 minutes, or until the cheese has melted and the sauce is creamy and smooth.
If you love an extra-creamy finish, stir in the sour cream just before serving.
6. Add your favorite toppings
Spoon the creamy chicken over rice, tortillas, or even baked potatoes.
Top with chopped cilantro and green onions.
I also love adding sliced avocado, diced tomatoes, jalapeños, or a little extra cheese.
My Tips for the Best Creamy Enchilada Chicken
Don’t use frozen chicken breasts in this recipe. For food safety and more predictable cooking, use thawed chicken.
Soften the cream cheese first. Cold cream cheese can take longer to melt smoothly. Cutting it into smaller cubes helps tremendously.
Don’t add all the cheese at the beginning. Adding it near the end gives you a smoother, creamier sauce.
Taste before adding extra salt. Enchilada sauce, canned soup, cheese, and green chiles can all contain quite a bit of sodium.
Want more heat? Add a diced jalapeño, extra green chiles, or a pinch of cayenne.
Want it milder? Use mild enchilada sauce and skip the jalapeños.

There are so many ways to serve this chicken.
My favorite is spooning it over fluffy white or Mexican-style rice and adding a handful of fresh toppings.

Can I Use Chicken Thighs?
Absolutely.
Boneless, skinless chicken thighs work beautifully in this recipe and tend to stay especially juicy in the slow cooker.
If your family prefers dark meat, I actually recommend giving thighs a try.
Can I Make This Ahead?
Yes.
You can prepare the ingredients in advance and refrigerate them until you’re ready to cook, although I recommend keeping the chicken refrigerated and assembling everything shortly before cooking.
Leftovers can be stored in an airtight container in the refrigerator for about 3–4 days.
When reheating, add a small splash of chicken broth or milk if the sauce has thickened too much.
Can I Freeze It?
You can freeze the cooked chicken, although creamy sauces containing dairy can sometimes change texture slightly after freezing.
If freezing, let the chicken cool completely before transferring it to a freezer-safe container.
