INGREDIENTS
- 1 ½ cups chicken, cooked and shredded
- ¼ cup barbecue sauce
- 1 large head romaine lettuce, roughly chopped
- 1 avocado, diced
- 1 cup cherry tomatoes, halved
- 1 cup corn, fresh or frozen
- 1/2 cup cilantro, roughly chopped
- 3 green onions, chopped
- 1 jalapeno, finely diced
- ⅔ cup shredded Mexican blend cheese
SAUCE
- 1/3 cup barbecue sauce
- ⅓ cup plain greek yogurt
- 1 (1 oz) packet ranch seasoning
- ½ cup crushed tortilla chips, for topping
PREPARATION
- Add shredded chicken to a small bowl and toss with ¼ cup barbeque sauce.
- In a large bowl, add all salad ingredients and toss to combine.
- In a small bowl, whisk together barbeque sauce, yogurt, and ranch seasoning until fully combined.
- When ready to serve, pour dressing over salad and toss to combine, then sprinkle crushed tortilla chips over top.
