BBQ Chicken Chop Salad

INGREDIENTS
  • 1 ½ cups chicken, cooked and shredded
  • ¼ cup barbecue sauce
  • 1 large head romaine lettuce, roughly chopped
  • 1 avocado, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, fresh or frozen
  • 1/2 cup cilantro, roughly chopped
  • 3 green onions, chopped
  • 1 jalapeno, finely diced
  • ⅔ cup shredded Mexican blend cheese
SAUCE
  • 1/3 cup barbecue sauce
  • ⅓ cup plain greek yogurt
  • 1 (1 oz) packet ranch seasoning
  • ½ cup crushed tortilla chips, for topping
PREPARATION
  1. Add shredded chicken to a small bowl and toss with ¼ cup barbeque sauce.
  2. In a large bowl, add all salad ingredients and toss to combine.
  3. In a small bowl, whisk together barbeque sauce, yogurt, and ranch seasoning until fully combined.
  4. When ready to serve, pour dressing over salad and toss to combine, then sprinkle crushed tortilla chips over top.
