Hawaiian BBQ Chicken & Veggie Foil Packets
Juicy chicken, sweet pineapple, and colorful veggies wrapped in foil with tangy Hawaiian-style BBQ sauce — perfect for oven, grill, or campfire!
📝 Ingredients
For the Chicken & Vegetables:
4 boneless, skinless chicken breasts (or thighs), ~1½ lbs total
1 red bell pepper, sliced
1 yellow bell pepper, sliced
½ red onion, thinly sliced
2 cups fresh pineapple chunks (or canned in juice, drained)
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon smoked paprika (optional)
For the Hawaiian BBQ Sauce:
½ cup barbecue sauce (your favorite brand)
2 tablespoons pineapple juice (from canned pineapple or fresh)
1 tablespoon soy sauce or coconut aminos
1 tablespoon brown sugar or honey (optional for extra sweetness)
½ teaspoon ground ginger (or 1 tsp fresh grated ginger)
🔪 Instructions
Step 1: Preheat Oven or Grill
Oven: Preheat to 400°F (200°C).
Grill: Heat to medium-high and lightly oil the grates.
Step 2: Make the Hawaiian BBQ Sauce
In a small bowl, whisk together:
BBQ sauce
Pineapple juice
Soy sauce/coconut aminos
Brown sugar or honey (if using)
Ginger
Taste and adjust for sweetness or tang. Set aside.
Step 3: Prep Chicken & Veggies
Slice peppers, onion, and pineapple into chunks.
Pat chicken dry. Season both sides with:
Salt, pepper
Garlic powder
Smoked paprika
Toss the veggies and pineapple with olive oil.
Step 4: Assemble the Foil Packets
Tear four sheets of heavy-duty aluminum foil (12×18 inches each).
In the center of each, layer:
1 chicken breast
A handful of sliced veggies and pineapple
Spoon 2–3 tbsp of Hawaiian BBQ sauce over the top
Fold foil over contents to seal tightly and form packets.
Step 5: Cook the Packets
Oven method:
Bake packets on a sheet tray for 25–30 minutes, until chicken is cooked through (165°F internal temp).Grill method:
Grill packets for 20–25 minutes, flipping halfway through.
Step 6: Serve
Carefully open packets (watch for steam!).
Garnish with:
Chopped green onions
Sesame seeds or fresh cilantro
Serve over rice, quinoa, or on their own with a wedge of lime.
