Chicken with Spinach and Mushrooms in Creamy Parmesan Sauce
Ingredients:
* 2 boneless, skinless chicken breasts
* 1 tablespoon olive oil
* Salt and pepper to taste
* 1 tablespoon butter
* 8 oz cremini mushrooms, sliced
* 5 oz fresh spinach
* 1 cup heavy cream
* 1/2 cup grated Parmesan cheese, plus more for serving
* 2 cloves garlic, minced
* 1/4 teaspoon dried thyme
* 1/4 teaspoon nutmeg (optional)
* Fresh parsley, chopped (for garnish)
Instructions:
* Prepare Chicken: Season the chicken breasts with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 4-5 minutes per side, or until cooked through. Remove from skillet and set aside.
* Sauté Mushrooms: Add butter to the same skillet over medium heat. Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5-7 minutes.
* Add Spinach and Garlic: Add the spinach and minced garlic to the skillet and cook until the spinach is wilted, about 2-3 minutes.
* Make the Sauce: Pour in the heavy cream and bring to a simmer. Reduce heat to low and stir in the Parmesan cheese, thyme, and nutmeg (if using). Cook for 2-3 minutes, or until the sauce has thickened slightly. Season with salt and pepper to taste.
* Return Chicken to Skillet: Return the cooked chicken breasts to the skillet. Spoon the sauce over the chicken, ensuring it’s coated well.
* Garnish and Serve: Garnish with chopped parsley and additional Parmesan cheese, if desired. Serve immediately.
