Baked Apple Cinnamon Cottage Cheese Breakfast Bowls – Warm, Cozy & Low-Carb
Ingredients (makes 4 bowls):
1 cup cottage cheese (240 g)
2 large eggs
1/2 cup almond flour or rolled oats (50 g almond flour or 45 g oats)
1 tsp cinnamon (3 g)
1 tsp vanilla extract (5 ml)
2–3 tbsp honey or maple syrup, optional (30–45 ml)
1/2 tsp baking powder (2 g)
Pinch of salt
1 medium apple, peeled and finely chopped (about 120 g)

Directions:
Step 1: Preheat oven to 350°F (175°C) and lightly grease four small oven-safe ramekins or a small baking dish.
Step 2: In a bowl, whisk together cottage cheese, eggs, vanilla, honey or maple syrup, and salt until smooth.
Step 3: Stir in almond flour or oats, baking powder, and cinnamon, then fold in the chopped apple.
Step 4: Divide the mixture into the ramekins and bake for 18–22 minutes until set and lightly golden.
