Browned Butter Carnivore Candies
Buttery, nutty, melt-in-your-mouth bites with only two or three ingredients — zero carbs, 100% animal-based.
🥩 Ingredients (Makes ~12–16 candies):
1 cup unsalted butter (grass-fed if possible)
2 tablespoons beef tallow or duck fat (optional, for firmness and added flavor)
Pinch of salt (use mineral-rich salt like Redmond’s for best flavor)
(Optional) 1 tsp vanilla extract or a few drops of liquid stevia (omit for strict carnivore)
(Optional) 1 tbsp powdered egg yolk or collagen powder (adds body)
🔥 Instructions:
Brown the butter:
Place the butter in a saucepan over medium heat.
Let it melt and bubble. Stir frequently and watch closely as the milk solids separate and start to brown (5–8 minutes).
It will smell nutty and golden—do not burn.
Once golden brown bits appear at the bottom, remove from heat.
Add fat & extras:
Stir in beef tallow or duck fat (if using), and any optional additions like vanilla or powdered yolk.
Add a pinch of salt to enhance the flavor.
Stir until fully melted and combined.
Pour into molds:
Carefully pour the hot mixture into silicone molds, an ice cube tray, or a parchment-lined dish.
Let cool slightly at room temp.
Chill:
Place in the fridge or freezer for 30–60 minutes, until fully solidified.
Pop and store:
Remove from molds and store in an airtight container in the fridge or freezer.
❄️ Storage:
Fridge: Keeps for 1–2 weeks.
Freezer: Up to 2 months (they melt fast at room temp!).
🍬 Optional Flavor Additions (Relaxed Carnivore):
Dash of cinnamon or nutmeg
Drop of maple or caramel extract
Sprinkle of flakey salt on top before chilling
