🥘 Carnivore Chicken Casserole (Creamy & Cheesy)

✅ Ingredients

  • 2 lbs (900 g) chicken thighs or chicken breast (boneless, skinless)

  • 8 oz (225 g) cream cheese (full-fat)

  • 1 cup heavy cream

  • 1½ cups shredded cheese
    (cheddar, mozzarella, Colby Jack, or a mix — carnivore-safe)

  • 4 tbsp butter

  • 1 tsp salt (to taste)

  • ½ tsp black pepper (optional if you allow minimal seasoning)

  • ½ tsp garlic powder (optional — omit for strict carnivore)


🔪 Instructions

  1. Preheat oven
    Set oven to 375°F (190°C).

  2. Cook the chicken

    • Cut chicken into bite-size pieces.

    • Melt butter in a skillet over medium heat.

    • Add chicken and salt; cook until just done (5–7 minutes).

    • Remove from heat.

  3. Make the creamy sauce

    • In the same skillet (low heat), add cream cheese and heavy cream.

    • Stir until smooth and creamy.

    • Add half of the shredded cheese and stir until melted.

  4. Assemble casserole

    • Add cooked chicken back into the sauce and mix well.

    • Transfer to a greased baking dish (9×13 or similar).

    • Top with remaining shredded cheese.

  5. Bake

    • Bake uncovered for 20–25 minutes, until bubbly and lightly golden on top.

  6. Rest & serve

    • Let sit 5 minutes before serving.


🍽 Tips & Variations

  • Extra rich: Add 2–3 egg yolks to the sauce (off heat) for custard-like texture.

  • Crispy top: Broil for 2–3 minutes at the end.

  • More fat: Add bacon bits or pork rinds on top (still carnivore).
