🥞 Carnivore Fluffy Pancakes
(Makes 4–6 pancakes)
These pancakes come out soft, fluffy, and surprisingly pancake-like, even though they’re made entirely from animal products.
Ingredients
4 large eggs
4 oz (½ cup) cream cheese or mascarpone or ricotta
1 tbsp melted butter (plus more for cooking)
1 scoop unflavored collagen or whey isolate (optional, improves fluffiness)
½ tsp baking powder (optional — not strict carnivore, but commonly used; omit if strict)
Pinch of salt
Optional extras (still animal-based):
½ tsp vanilla extract (not strict carnivore)
1 tbsp heavy cream for richer batter
Instructions
1. Blend the Batter
Combine in a blender or bowl:
Eggs
Cream cheese (softened)
Melted butter
Salt
Collagen/whey (if using)
Baking powder (if using)
Blend until completely smooth and airy.
Let the batter rest for 2–3 minutes to thicken.
2. Heat the Pan
Use a nonstick skillet or griddle.
Heat on medium-low.
Add a little butter or ghee to grease the pan.
3. Cook the Pancakes
Pour small pancakes (about 3–4 inches wide—easier to flip).
Cook 2–3 minutes until bubbles form on top and edges look set.
Flip gently and cook 1–2 minutes on the other side.
Tip: Low heat = fluffier pancakes that don’t burn.
4. Serve
Serve warm with:
Whipped cream
Butter
Cream cheese spread
Sugar-free syrup (not strict carnivore)
Berries (not carnivore, optional)
Fluffiness Boost Tips
Add 1–2 tbsp heavy cream to make batter richer.
Whip egg whites separately and fold them in (maximum fluff!).
Let batter rest for 5 minutes before cooking.
Strict Carnivore Version (super simple)
Ingredients:
4 eggs
4 oz cream cheese
Butter for pan
Blend → Cook on low → Done.
Still fluffy and very good!
