12 slices hard cheese (provolone, mozzarella, or Swiss)
2 cups shredded mozzarella
1½ cups ricotta or mascarpone

🔪 Instructions
1️⃣ Cook the Meat
Preheat oven to 375°F (190°C)
Cook bacon until crisp → chop → set aside
Brown ground beef in the bacon fat or tallow
Season only with salt
Drain excess fat (leave a little for moisture)
2️⃣ Assemble the Lasagna
Use a greased 9×13 or similar baking dish.
Layer order (repeat 2–3 times):
Ground beef
Ricotta/mascarpone (spread lightly)
Bacon pieces
Sliced cheese (acts as “noodles”)
Finish with:
Shredded mozzarella on top
3️⃣ Bake
Cover loosely with foil
Bake 25 minutes
Uncover → bake 10 minutes until bubbly and golden
Rest 10 minutes before slicing (important for structure).
🔥 Texture & Flavor Notes
Cheese slices = perfect pasta replacement
Bacon adds umami + crunch
High-fat beef keeps it juicy
No plant fillers → extremely satiating
❓ Q & A
❓ Can I skip ricotta?
Yes.
Use only sliced cheese layers
Result = firmer, more “meaty” lasagna
❓ Best cheese for lasagna layers?
Provolone (closest to noodle texture)
Mozzarella (softer, melty)
Swiss (firmer, richer)
❓ Too greasy?
Use 85/15 beef
Drain fat well
Chill after baking → fat solidifies and can be removed
❓ Can I make it dairy-light?
Yes:
Use just one cheese
Or skip ricotta and rely on sliced cheese only
❓ Can I meal prep this?
Absolutely.
Refrigerates 4–5 days
Reheats beautifully in oven or skillet
❓ Is this keto or zero-carb?
Strict carnivore
Zero carb (trace carbs from cheese only)
🥩 Optional Carnivore Variations
Egg-layer lasagna: Whisk 4 eggs + heavy cream, pour between layers
Beef & egg lasagna: Add soft-scrambled eggs as a layer
Bone marrow boost: Dot marrow pieces between layers
