🥩 Carnivore Meatballs (Zero Carb)

Ingredients (4 servings)

  • 1 lb (450 g) ground beef (80/20 or fattier works best)

  • 1 tsp fine salt (or to taste)

  • 1 egg (optional, but helps bind)

  • 1–2 tbsp beef tallow, butter, or ghee (for cooking)

That’s it. No spices, no breadcrumbs, no plants.

Instructions

  1. Preheat pan or oven

    • Stovetop: Heat a skillet over medium heat and add fat.

    • Oven option: Preheat oven to 400°F (205°C) and line a baking tray.

  2. Mix

    • In a bowl, gently mix ground beef and salt.

    • Add egg if using. Mix just until combined (don’t overwork).

  3. Form meatballs

    • Roll into golf-ball sized balls (about 1½–2 inches).

  4. Cook

    • Stovetop:

      • Place meatballs in hot fat.

      • Cook 3–4 minutes per side until browned and internal temp reaches 160°F (71°C).

    • Oven:

      • Bake for 18–22 minutes, flipping halfway if desired.

  5. Rest

    • Let rest 5 minutes before eating.

Optional Carnivore Variations
