🥩 Carnivore Meatballs (Zero Carb)
Ingredients (4 servings)
1 lb (450 g) ground beef (80/20 or fattier works best)
1 tsp fine salt (or to taste)
1 egg (optional, but helps bind)
1–2 tbsp beef tallow, butter, or ghee (for cooking)
That’s it. No spices, no breadcrumbs, no plants.
Instructions
Preheat pan or oven
Stovetop: Heat a skillet over medium heat and add fat.
Oven option: Preheat oven to 400°F (205°C) and line a baking tray.
Mix
In a bowl, gently mix ground beef and salt.
Add egg if using. Mix just until combined (don’t overwork).
Form meatballs
Roll into golf-ball sized balls (about 1½–2 inches).
Cook
Stovetop:
Place meatballs in hot fat.
Cook 3–4 minutes per side until browned and internal temp reaches 160°F (71°C).
Oven:
Bake for 18–22 minutes, flipping halfway if desired.
Rest
Let rest 5 minutes before eating.
Optional Carnivore Variations
(Still zero carb)
Cheesy meatballs: Add ¼ cup grated hard cheese (parmesan or aged cheddar)
Extra juicy: Use 70/30 ground beef
Beef & lamb: 50/50 mix for richer flavor
Crispy outside: Air fry at 375°F (190°C) for 10–12 minutes
