Carnivore Steak Bites (Juicy & Crispy)
Ingredients
1½–2 lb steak (ribeye is best; sirloin or NY strip work too)
1–1½ tsp sea salt (to taste)
2 tbsp beef tallow, butter, or ghee
Optional (still carnivore-friendly):
Bone marrow butter
Bacon fat
No seasonings needed beyond salt for true carnivore.
Instructions
Prep the steak
Pat steak completely dry.
Cut into 1–1½ inch cubes.
Salt generously and let rest 10–15 minutes.
Heat the pan
Heat a cast-iron skillet over high heat until smoking hot.
Add fat (tallow or butter).
Sear the bites
Add steak bites in a single layer (don’t overcrowd).
Sear 60–90 seconds per side until deep brown crust forms.
Flip once or twice only.
Finish
Lower heat slightly.
Add extra butter or marrow butter if using.
Toss bites for 30 seconds to coat.
Rest & serve
Remove from pan and rest 2–3 minutes.
Sprinkle with extra salt if needed.
 Tips for Perfect Steak Bites
Ribeye = juiciest (fat is flavor on carnivore).
Hot pan is non-negotiable.
Cook in batches if needed.
Medium-rare is ideal (overcooking dries them out).
