🍦 Carnivore Vanilla Ice Cream
A creamy, decadent dessert made with just a few animal-based ingredients!
✅ Servings: 4 | ⏰ Prep Time: 5 min | ❄️ Freeze Time: 2–4 hrs | 🍽️ Total Time: ~4 hrs
🧾 Ingredients:
-
2 cups heavy whipping cream
-
4 large egg yolks
-
2 tbsp butter (optional, for richness)
-
1 tsp vanilla extract (optional, omit for strict carnivore)
-
Sweetener of choice (optional – stevia, allulose, or skip for strict carnivore)
-
Pinch of salt
👨🍳 Instructions:
STEP 1: Warm the Base
-
In a saucepan over medium-low heat, combine the cream and butter (if using). Heat gently until warm, not boiling.
-
In a separate bowl, whisk egg yolks until smooth.
STEP 2: Temper the Yolks
-
Slowly pour a bit of the warm cream into the yolks while whisking continuously to temper them.
-
Then pour the yolk mixture back into the saucepan with the rest of the cream.
STEP 3: Thicken the Custard
-
Cook on low, stirring constantly, until the mixture thickens slightly (it should coat the back of a spoon).
-
Remove from heat and stir in vanilla (if using), sweetener (if using), and a pinch of salt.
STEP 4: Chill and Freeze
-
Let cool completely, then pour into a container and freeze for 2–4 hours (stir every hour if not using an ice cream maker).
OR churn in an ice cream maker according to the manufacturer’s instructions.
🥄 Serving Suggestions:
-
Serve soft-serve style after 2 hours, or freeze overnight for a firmer scoop.
-
Top with crispy bacon bits or whipped cream for a carnivore-approved twist! 🥓🍦
💡 Tips:
-
Use duck egg yolks for extra richness.
-
Skip vanilla & sweetener for strict carnivore – it’s still delicious thanks to the natural sweetness of cream and yolks.
