2 cups heavy whipping cream
4 large egg yolks
2 tbsp butter (optional, for richness)
1 tsp vanilla extract (optional, omit for strict carnivore)
Sweetener of choice (optional β stevia, allulose, or skip for strict carnivore)
Pinch of salt

STEP 1: Warm the Base
In a saucepan over medium-low heat, combine the cream and butter (if using). Heat gently until warm, not boiling.
In a separate bowl, whisk egg yolks until smooth.
STEP 2: Temper the Yolks
