🧾 Ingredients:

  • 2 cups heavy whipping cream

  • 4 large egg yolks

  • Sweetener of choice (optional – stevia, allulose, or skip for strict carnivore)

  • Pinch of salt


👨‍🍳 Instructions:

STEP 1: Warm the Base

  1. In a saucepan over medium-low heat, combine the cream and butter (if using). Heat gently until warm, not boiling.

  2. In a separate bowl, whisk egg yolks until smooth.

STEP 2: Temper the Yolks
