Country Ranch Green Beans ‘n Potatoes with Bacon
Ingredients:
450g fresh green beans, trimmed
750g baby potatoes (red or Yukon gold), halved or quartered
6 slices bacon, cooked and crumbled
1 packet ranch seasoning mix
45ml butter, melted
Instructions:
1. Preheat the oven to 200°C.
2. In a large bowl, combine the green beans and baby potatoes.
3. In a small bowl, mix together the melted butter and ranch seasoning mix.
4. Pour the butter and ranch mixture over the green beans and potatoes, and toss to coat.
5. Add the crumbled bacon to the bowl and toss again to combine.
6. Spread the green bean and potato mixture out in a single layer on a baking sheet.
7. Bake in the preheated oven for 20-25 minutes, or until the potatoes are tender and the green beans are cooked through.
8. Remove from the oven and serve hot.
Note: You can adjust the amount of ranch seasoning mix to taste, and also add some chopped fresh herbs like parsley or chives for extra flavor. Enjoy!
