Creamy Peas on Toast (Classic Comfort Dish)

🧾 Ingredients (Serves 2–3)

  • 2 cups green peas (fresh or frozen)

  • 2 tablespoons butter

  • 2 tablespoons all-purpose flour

  • 1½ cups milk (whole milk preferred)

  • ½ teaspoon salt (adjust to taste)

  • ¼ teaspoon black pepper

  • 1–2 cloves garlic (finely minced, optional)

  • 1 tablespoon chopped fresh parsley (optional)

  • 4 slices bread (thick-cut, sourdough or country bread works best)

  • 1 tablespoon olive oil or extra butter (for toasting)

  • Optional: grated Parmesan cheese (2–3 tbsp)


🔪 Prep Steps

  1. Cook the peas

    • If using fresh peas: boil in salted water for 3–5 minutes until tender.

    • If using frozen peas: simmer for 2–3 minutes until heated through.

    • Drain and set aside.

  2. Toast the bread

    • Heat a pan over medium heat.

    • Brush bread with olive oil or butter.

    • Toast until golden and crisp on both sides.

    • Set aside.


🍳 Make the Cream Sauce

  1. Melt butter in a saucepan over medium heat.

  2. Add garlic (if using) and sauté for about 30 seconds.

  3. Stir in flour and cook for 1–2 minutes (this forms a roux).

  4. Gradually whisk in milk, stirring constantly to avoid lumps.

  5. Cook until the sauce thickens (about 3–5 minutes).

  6. Season with salt and pepper.


🥣 Combine

  1. Add cooked peas to the sauce.

  2. Stir gently to coat them evenly.

  3. Simmer for another 2–3 minutes.

  4. Optional: stir in Parmesan for extra richness.


🍽️ Assemble

  • Spoon the creamy peas generously over toasted bread.

  • Sprinkle with parsley and extra black pepper.
