Shrimp

  • 450 g / 1 lb large raw shrimp, peeled & deveined

  • ½ tsp black pepper

Sauce

  • 1 tbsp butter

  • 4–5 cloves garlic, minced

  • ½ cup (120 ml) chicken stock (or white wine)

  • 1 cup (240 ml) heavy cream (double cream)

  • ½ cup grated Parmesan cheese

  • ½ tsp Italian seasoning

  • ¼ tsp chili flakes (optional)

  • ½ cup sun-dried tomatoes, sliced

  • 1½ cups baby spinach

  • Salt & pepper, to taste

  • Pasta, rice, mashed potatoes, or crusty bread

👩‍🍳 Instructions

1️⃣ Season the Shrimp

Pat shrimp dry. Toss with salt, pepper, paprika, and olive oil.


2️⃣ Sear the Shrimp

  • Heat a large skillet over medium-high heat.

  • Add shrimp in a single layer.

  • Cook 1–2 minutes per side until just pink.

  • Remove shrimp and set aside (don’t overcook).


3️⃣ Make the Sauce

  • Reduce heat to medium.

  • Add butter to the same pan.

  • Stir in garlic; cook 30 seconds until fragrant.

  • Pour in chicken stock (or wine), scraping up browned bits.

  • Simmer 2–3 minutes to reduce slightly.


4️⃣ Creamy Tuscan Magic

  • Stir in cream, Parmesan, Italian seasoning, and chili flakes.

  • Simmer gently 3–5 minutes until slightly thickened.

  • Add sun-dried tomatoes and spinach; cook until spinach wilts.


5️⃣ Finish

  • Return shrimp to pan.

  • Simmer 1–2 minutes until shrimp is heated through.
