Crispy Cabbage Fritters with Garlic Yogurt Dip
These golden cabbage fritters are crispy on the outside and soft inside. Finely shredded cabbage is mixed with eggs, flour, cheese, and seasonings, then pan-fried until perfectly golden. They are usually served with a creamy garlic yogurt sauce for dipping.
Ingredients (Serves 4–5)
For the Cabbage Fritters
3 cups finely shredded cabbage (about ½ medium cabbage)
1 small onion (finely grated or chopped)
2 eggs
½ cup all-purpose flour
½ cup shredded mozzarella cheese
¼ cup grated parmesan cheese
3 cloves garlic (minced)
½ tsp salt
½ tsp black pepper
½ tsp paprika
1 tbsp chopped parsley or green onions (optional)
Oil for frying
For the Garlic Yogurt Dip
1 cup plain yogurt or Greek yogurt
2 cloves garlic (finely minced)
1 tbsp lemon juice
1 tbsp olive oil
¼ tsp salt
¼ tsp black pepper
½ tsp dried dill or parsley
Paprika or chili flakes (for garnish)
Instructions
1. Prepare the Cabbage
Finely shred the cabbage using a knife or grater.
Place it in a bowl and sprinkle ½ teaspoon salt over it.
Let it sit for 10 minutes to soften.
Squeeze out excess moisture using your hands or a clean towel.
This step helps keep the fritters crispy instead of watery.
2. Make the Fritter Batter
In a large bowl combine:
shredded cabbage
grated onion
eggs
flour
mozzarella cheese
parmesan cheese
minced garlic
black pepper and paprika
parsley or green onions
Mix well until everything is evenly combined. The mixture should be thick and slightly sticky.
3. Heat the Oil
Heat about ½ cm of oil in a large skillet over medium heat.
The oil should be hot but not smoking.
4. Fry the Fritters
Scoop about 2 tablespoons of the mixture into the pan.
Flatten slightly with a spoon.
Fry for 3–4 minutes per side until golden brown and crispy.
Flip and cook the other side.
Continue until all the mixture is used.
5. Drain
Place cooked fritters on paper towels to remove excess oil.

lemon juice
olive oil
salt and pepper
dried herbs

roasted vegetables
Tips for Perfect Cabbage Fritters
Always squeeze water out of the cabbage to avoid soggy fritters.
If the batter is too wet, add 1–2 extra tablespoons flour.
Cook on medium heat so they become crispy without burning.
For extra flavor, add ½ teaspoon cumin or oregano.
