🛒 Ingredients
For the flatbread
1 store-bought flatbread or naan (or homemade pizza dough rolled thin)
6–8 oz (170–225 g) Brie cheese, rind on or off, sliced
½ cup fresh blueberries
⅓ cup walnuts, roughly chopped
1 tablespoon olive oil
Optional toppings (highly recommended)
1–2 teaspoons honey
Fresh thyme leaves (½ teaspoon)
Pinch of sea salt
Freshly cracked black pepper
Small handful arugula (for serving)
Balsamic glaze (light drizzle)
🔥 Instructions
1️⃣ Roast the Walnuts
Preheat oven to 375°F (190°C).
Spread chopped walnuts on a small baking sheet.
Roast for 5–7 minutes until fragrant and lightly golden.
Remove and set aside.
(You can skip this step if using pre-roasted walnuts, but freshly roasted adds great flavor.)
2️⃣ Prepare the Flatbread
Place flatbread on a baking sheet.
Brush lightly with olive oil.
Arrange sliced Brie evenly over the surface.
Scatter blueberries on top.
Sprinkle with roasted walnuts.
3️⃣ Bake
Bake at 375°F (190°C) for 10–15 minutes.
The cheese should be melted and bubbly.
The edges of the flatbread should be golden and crisp.
For extra crispiness, bake directly on the oven rack for the last 2–3 minutes.
4️⃣ Finish & Serve
Remove from oven.
Drizzle lightly with honey.
Sprinkle thyme, sea salt, and black pepper.
Add fresh arugula if desired.
Slice and serve warm.

Add thinly sliced red onion for a savory contrast.
Swap blueberries for sliced pears or figs in fall.
Add a few crumbles of blue cheese for a stronger flavor.
