Crispy Flatbread with Brie, Cranberries & Toasted Pecans

🛒 Ingredients (Serves 4)
1 large flatbread, naan, or store-bought thin pizza crust
2 tbsp olive oil or melted butter
4 oz Brie cheese, sliced or cubed
¼ cup dried cranberries
¼ cup toasted pecans, roughly chopped
1 tsp fresh thyme or rosemary (optional)
1–2 tsp honey for drizzling
Salt & black pepper, to taste
🔥 Instructions
1️⃣ Preheat Oven
Preheat oven to 400°F (200°C).
Line a baking sheet with parchment paper.
2️⃣ Prepare Flatbread
Lightly brush flatbread with olive oil or melted butter.
Sprinkle a pinch of salt and pepper over the surface.
3️⃣ Assemble Toppings
Arrange Brie slices evenly over the flatbread.
Scatter dried cranberries and toasted pecans on top.
Sprinkle fresh thyme or rosemary if using.
4️⃣ Bake
Place flatbread on the baking sheet.
Bake 8–10 minutes until Brie is melted and edges of flatbread are golden and crisp.
5️⃣ Finish & Serve
Remove from oven and drizzle lightly with honey.
Slice into pieces and serve warm.
