Crispy Sausage, Potatoes & Onions

🛒 Ingredients (Serves 4)

  • 14 oz (400g) smoked sausage or kielbasa, sliced into ½-inch rounds

  • 2 lbs (900g) Yukon Gold or red potatoes, cut into bite-size chunks

  • 1 large onion, chopped into large pieces

  • 3 tbsp olive oil

  • 3 cloves garlic, minced

  • 1 tsp paprika (smoked paprika preferred)

  • 1 tsp Italian seasoning

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp black pepper

  • ¾ tsp salt (adjust to taste)

  • 1 tbsp fresh parsley, chopped (for garnish)

Optional:

  • ½ tsp red pepper flakes (for heat)

  • ½ tsp Cajun seasoning (extra bold flavor)


🔥 Oven Method (Best for Extra Crispy Potatoes)

Step 1: Preheat

  • Preheat oven to 425°F (220°C).

  • Line a large baking sheet with parchment paper or lightly grease it.

Step 2: Season the Potatoes

  1. In a large bowl, toss potatoes with:

    • Olive oil

    • Garlic

    • Paprika

    • Italian seasoning

    • Garlic powder

    • Onion powder

    • Salt & pepper

  2. Mix until evenly coated.

Step 3: First Roast (Important for Crispiness)

  • Spread potatoes in a single layer.

  • Roast for 20 minutes before adding sausage.

    This helps potatoes get crispy instead of soggy.

Step 4: Add Sausage & Onion

  • Remove pan from oven.

  • Add sliced sausage and chopped onions.

  • Toss gently and spread back into a single layer.

Step 5: Final Roast

  • Roast another 15–20 minutes, until:

    • Potatoes are golden brown

    • Sausage edges are slightly caramelized

    • Onions are tender

Optional: Broil for 2–3 minutes at the end for extra browning.

Step 6: Garnish

  • Sprinkle fresh parsley on top.

  • Serve hot.


🍟 Air Fryer Method (Faster & Extra Crispy)

  1. Preheat air fryer to 400°F (200°C).

  2. Toss everything together at once (no need to pre-cook potatoes).

  3. Cook in batches (don’t overcrowd) for 15–18 minutes.

  4. Shake basket halfway through.

  5. Cook until potatoes are tender and sausage is browned.

  • Serve as a full meal on its own

  • Top with shredded cheese and melt
