Crispy Sausage, Potatoes & Onions
🛒 Ingredients (Serves 4)
14 oz (400g) smoked sausage or kielbasa, sliced into ½-inch rounds
2 lbs (900g) Yukon Gold or red potatoes, cut into bite-size chunks
1 large onion, chopped into large pieces
3 tbsp olive oil
3 cloves garlic, minced
1 tsp paprika (smoked paprika preferred)
1 tsp Italian seasoning
½ tsp garlic powder
½ tsp onion powder
½ tsp black pepper
¾ tsp salt (adjust to taste)
1 tbsp fresh parsley, chopped (for garnish)
Optional:
½ tsp red pepper flakes (for heat)
½ tsp Cajun seasoning (extra bold flavor)
🔥 Oven Method (Best for Extra Crispy Potatoes)
Step 1: Preheat
Preheat oven to 425°F (220°C).
Line a large baking sheet with parchment paper or lightly grease it.
Step 2: Season the Potatoes
In a large bowl, toss potatoes with:
Olive oil
Garlic
Paprika
Italian seasoning
Garlic powder
Onion powder
Salt & pepper
Mix until evenly coated.
Step 3: First Roast (Important for Crispiness)
Spread potatoes in a single layer.
Roast for 20 minutes before adding sausage.
This helps potatoes get crispy instead of soggy.
Step 4: Add Sausage & Onion
Remove pan from oven.
Add sliced sausage and chopped onions.
Toss gently and spread back into a single layer.
Step 5: Final Roast
Roast another 15–20 minutes, until:
Potatoes are golden brown
Sausage edges are slightly caramelized
Onions are tender
Optional: Broil for 2–3 minutes at the end for extra browning.
Step 6: Garnish
Sprinkle fresh parsley on top.
