🥔 Crispy Sweet Potato & Quinoa Patties
Ingredients:
1 medium sweet potato (about 1 cup mashed)
1 cup cooked quinoa
½ cup finely chopped red onion
2 cloves garlic, minced
¼ cup chopped fresh parsley or cilantro
¼ cup breadcrumbs (or use oat flour for gluten-free)
1 egg (or flax egg for vegan)
½ tsp cumin
½ tsp smoked paprika
Salt and pepper to taste
Olive oil for pan-frying
Instructions:
Cook the sweet potato: Peel and cube, then steam or boil until soft. Mash and let cool.
Combine ingredients: In a large bowl, mix mashed sweet potato, cooked quinoa, onion, garlic, herbs, breadcrumbs, egg, and spices. Adjust seasoning.
Form patties: Shape into 6–8 small patties. If mixture is too wet, add more breadcrumbs.
Cook: Heat oil in a non-stick skillet over medium heat. Fry patties 3–4 mins per side until golden and crispy. Place on paper towels to drain excess oil.
🥑 Zesty Lemon Avocado Drizzle
Ingredients:
1 ripe avocado
Juice of 1 lemon (or more to taste)
2 tbsp olive oil
1 clove garlic, minced
2 tbsp water (to thin, as needed)
Salt and pepper to taste
Instructions:
Add all ingredients to a blender or food processor.
Blend until smooth and creamy. Add more water or lemon juice to reach your desired consistency.
Taste and adjust salt, pepper, or lemon for extra zing.
🌿 To Serve:
Drizzle the avocado sauce over warm patties.
Serve with a green salad, grilled veggies, or tucked into pita pockets.
