Ingredients:

For the Enchiladas:
-10 flour tortillas
-1 can (10 oz) red enchilada sauce
-2 cups shredded cheddar cheese
-2 cups shredded mozzarella cheese
-1/2 cup sour cream (optional)
-1/4 cup chopped fresh cilantro (for garnish)
Instructions:

Season the chicken breasts with chili powder, garlic powder, onion powder, cumin, salt, and pepper.
Heat the olive oil in a pan over medium heat. Cook the chicken breasts for 5-7 minutes on each side, or until fully cooked.
Shred the chicken using two forks and set aside.

Preheat the oven to 350°F (175°C).
