Dorito Taco Salad (Serves 4–6)

🧾 Ingredients

🥩 For the taco meat:

  • 500g (1 lb) ground beef (or ground chicken/turkey)
  • 1 small onion (finely chopped)
  • 2 cloves garlic (minced)
  • 1 packet taco seasoning (or homemade)
  • ½ cup water
  • Salt & pepper to taste

🥗 For the salad base:

  • 1 large head iceberg lettuce (chopped)
  • 1 cup cherry tomatoes (halved)
  • 1 cup canned corn (drained)
  • 1 cup canned black beans (rinsed & drained)
  • 1 cup shredded cheddar cheese
  • ½ red onion (thinly sliced)

🌶️ Extras (optional but recommended):

  • 1 avocado (diced)
  • ½ cup sliced jalapeños
  • ¼ cup chopped cilantro

🧀 Crunch factor:

  • 1 large bag Doritos (Nacho Cheese flavor, lightly crushed)

🥣 Dressing options:

Option 1: Creamy Taco Dressing

  • ½ cup sour cream
  • ¼ cup mayonnaise
  • 2 tbsp salsa
  • 1 tsp taco seasoning
  • Juice of ½ lime

Option 2: Catalina-style dressing (classic version)

  • ½ cup Catalina or French dressing
  • 1–2 tbsp salsa (optional)

👩‍🍳 Instructions

Step 1: Cook the taco meat

  1. Heat a pan over medium heat.
  2. Add ground beef and cook until browned.
  3. Add onion and garlic, cook until softened.
  4. Drain excess fat if needed.
  5. Stir in taco seasoning and water.
  6. Simmer for 5–7 minutes until thickened.
  7. Let it cool slightly (important so it doesn’t wilt the lettuce).

Step 2: Prep the salad

  • In a large bowl, combine:
    • Lettuce
    • Tomatoes
    • Corn
    • Black beans
    • Cheese
    • Onion
    • Optional extras

Step 3: Make the dressing

  • Whisk together your chosen dressing ingredients until smooth.
  • Adjust salt, spice, or tanginess to taste.

Step 4: Assemble (key step!)

  • Add slightly cooled taco meat to the salad.
  • Pour dressing over and toss gently.
  • Add crushed Doritos just before serving to keep them crunchy.

🍽️ Serving Tips

  • Serve immediately for maximum crunch.
  • You can also layer it in a large dish for a party presentation.
  • Add extra Doritos on top for a bold look.
