• 1 cup ricotta cheese
• 1/2 cup grated Parmesan cheese
• 1/2 cup shredded mozzarella cheese
• 2 large eggs
• 1 teaspoon minced garlic
• 1/4 teaspoon ground nutmeg (optional)
• 1/2 teaspoon salt (adjust to taste)
• 1/4 teaspoon black pepper
• 1/4 teaspoon Italian seasoning (or fresh basil, chopped)
• Nonstick cooking spray
Instructions

Preheat Oven: Heat your oven to 375°F (190°C). Lightly coat a baking dish with nonstick spray.

Wilt Spinach: Cook fresh spinach in a skillet until wilted (or skip this step if using pre-cooked frozen spinach). Drain thoroughly to remove excess moisture.

Prepare the Mixture: In a large bowl, mix ricotta, Parmesan, mozzarella, eggs, garlic, nutmeg, salt, pepper, and Italian seasoning. Blend until smooth.

Combine: Fold the wilted spinach into the cheese mixture, ensuring it’s evenly distributed.

Bake: Pour the mixture into the prepared dish and smooth the top. Bake for 25–30 minutes or until set and lightly golden.

Cool and Serve: Allow it to cool for 5 minutes before serving. Garnish with fresh herbs if desired.
