Fried Alligator (Southern Style)
🛒 Ingredients
For the alligator:
1 lb alligator tail meat (cut into 1-inch bite-size pieces)
1 cup buttermilk
1 teaspoon hot sauce (optional)
1 cup cornmeal
1 cup all-purpose flour
1 teaspoon salt
1 teaspoon black pepper
1 teaspoon paprika
½ teaspoon garlic powder
½ teaspoon cayenne pepper (optional, for heat)
Vegetable oil (for frying)
Optional dipping sauces:
Remoulade sauce
Spicy aioli
Ranch dressing
👩🍳 Instructions
1️⃣ Tenderize & Marinate
If needed, lightly pound thicker pieces of alligator to tenderize.
In a bowl, combine buttermilk and hot sauce.
Add alligator pieces and marinate for 30–60 minutes (refrigerated).
2️⃣ Prepare Coating
In a separate bowl, mix cornmeal, flour, salt, pepper, paprika, garlic powder, and cayenne.
3️⃣ Heat Oil
Pour vegetable oil into a deep skillet or fryer (about 2–3 inches deep).
Heat to 350–375°F (175–190°C).
4️⃣ Dredge & Fry
Remove alligator from marinade, letting excess drip off.
Dredge in the flour/cornmeal mixture, coating evenly.
Fry in small batches for 2–4 minutes, until golden brown.
Do not overcrowd the pan.
5️⃣ Drain & Serve
Remove with a slotted spoon and drain on paper towels.
Serve hot with lemon wedges and your favorite dipping sauce.
🔥 Tips for Best Results
Use tail meat — it’s the most tender cut.
Don’t overcook; alligator becomes chewy if fried too long.
For extra crispiness, double-dip (buttermilk → flour → buttermilk → flour).
