Fried Alligator (Southern Style)

🛒 Ingredients

For the alligator:

  • 1 lb alligator tail meat (cut into 1-inch bite-size pieces)

  • 1 cup buttermilk

  • 1 teaspoon hot sauce (optional)

  • 1 cup cornmeal

  • 1 cup all-purpose flour

  • 1 teaspoon salt

  • 1 teaspoon black pepper

  • 1 teaspoon paprika

  • ½ teaspoon garlic powder

  • ½ teaspoon cayenne pepper (optional, for heat)

  • Vegetable oil (for frying)

Optional dipping sauces:

  • Remoulade sauce

  • Spicy aioli

  • Ranch dressing


👩‍🍳 Instructions

1️⃣ Tenderize & Marinate

  • If needed, lightly pound thicker pieces of alligator to tenderize.

  • In a bowl, combine buttermilk and hot sauce.

  • Add alligator pieces and marinate for 30–60 minutes (refrigerated).

2️⃣ Prepare Coating

  • In a separate bowl, mix cornmeal, flour, salt, pepper, paprika, garlic powder, and cayenne.

3️⃣ Heat Oil

  • Pour vegetable oil into a deep skillet or fryer (about 2–3 inches deep).

  • Heat to 350–375°F (175–190°C).

4️⃣ Dredge & Fry

  • Remove alligator from marinade, letting excess drip off.

  • Dredge in the flour/cornmeal mixture, coating evenly.

  • Fry in small batches for 2–4 minutes, until golden brown.

  • Do not overcrowd the pan.

5️⃣ Drain & Serve

  • Remove with a slotted spoon and drain on paper towels.

  • Serve hot with lemon wedges and your favorite dipping sauce.


🔥 Tips for Best Results

  • Use tail meat — it’s the most tender cut.

  • Don’t overcook; alligator becomes chewy if fried too long.

  • For extra crispiness, double-dip (buttermilk → flour → buttermilk → flour).
