🍽️ Ingredients (Serves 4)
For the Chicken
- 2 large chicken breasts, cut into chunks
- 2 tbsp olive oil
- 3 garlic cloves, minced
- 1 tsp paprika
- 1 tsp Italian seasoning
- ½ tsp onion powder
- ½ tsp garlic powder
- Salt and black pepper, to taste
For the Vegetables
- 500g baby potatoes, halved
- 2 carrots, cut into chunks
- 2 cups broccoli florets
- 1 large onion, cut into wedges
- 2 tbsp olive oil
- 1 tsp Italian seasoning
- ½ tsp paprika
- Salt and pepper
Optional Garnish
- Fresh parsley, chopped
- Lemon wedges
- Grated Parmesan cheese
👩🍳 Instructions
- Preheat the oven to 400°F (200°C).
- Toss the potatoes and carrots with olive oil, Italian seasoning, paprika, salt, and pepper. Spread on a baking tray.
- Roast for 20 minutes.
- Meanwhile, combine the chicken with olive oil, garlic, paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper.
- Remove the tray from the oven and add the broccoli, onion wedges, and seasoned chicken.
- Toss everything gently and spread into a single layer.
- Roast for another 20–25 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are golden.
- Sprinkle with fresh parsley and Parmesan if desired.
- Serve immediately or divide into meal-prep containers for easy lunches.
