🍽️ Ingredients (Serves 4)

For the Chicken

  • 2 large chicken breasts, cut into chunks
  • 2 tbsp olive oil
  • 3 garlic cloves, minced
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • ½ tsp onion powder
  • ½ tsp garlic powder
  • Salt and black pepper, to taste

For the Vegetables

  • 500g baby potatoes, halved
  • 2 carrots, cut into chunks
  • 2 cups broccoli florets
  • 1 large onion, cut into wedges
  • 2 tbsp olive oil
  • 1 tsp Italian seasoning
  • ½ tsp paprika
  • Salt and pepper

Optional Garnish

  • Fresh parsley, chopped
  • Lemon wedges
  • Grated Parmesan cheese

👩‍🍳 Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Toss the potatoes and carrots with olive oil, Italian seasoning, paprika, salt, and pepper. Spread on a baking tray.
  3. Roast for 20 minutes.
  4. Meanwhile, combine the chicken with olive oil, garlic, paprika, Italian seasoning, garlic powder, onion powder, salt, and pepper.
  5. Remove the tray from the oven and add the broccoli, onion wedges, and seasoned chicken.
  6. Toss everything gently and spread into a single layer.
  7. Roast for another 20–25 minutes, or until the chicken reaches 165°F (74°C) and the vegetables are golden.
  8. Sprinkle with fresh parsley and Parmesan if desired.
  9. Serve immediately or divide into meal-prep containers for easy lunches.
