Garlic Herb Crusted Prime Rib Roast

📋 Ingredients:
1 (5–7 lb) bone-in prime rib roast
¼ cup olive oil or softened butter
6 cloves garlic, minced
2 tbsp fresh rosemary, chopped (or 2 tsp dried)
1 tbsp fresh thyme, chopped (or 1 tsp dried)
1 tbsp kosher salt
2 tsp black pepper
Optional: 1 tbsp Dijon mustard (for flavor depth)
🔪 Instructions:
1. Prep the Roast:
Bring the roast to room temperature (sit out for 1–2 hours).
Pat dry with paper towels.
2. Make the Garlic Herb Rub:
In a small bowl, mix:
Olive oil or butter
Garlic
Herbs
Salt & pepper
(Optional mustard)
Rub all over the roast, pressing it into the meat.
3. Roast:
Preheat your oven to 450°F (232°C).
Place the roast bone-side down or on a roasting rack in a pan.
Roast for 20 minutes at 450°F to create a crust.
Reduce heat to 325°F (163°C) and continue roasting:
For rare: ~120–125°F internal temp
Medium-rare: 130–135°F
Medium: 135–140°F
(Use a meat thermometer!)
4. Rest:
Remove from oven, tent loosely with foil, and rest for 20–30 minutes before slicing. This allows juices to redistribute.
